Egg Pancakes

Before you get all excited about some foreign delicacy or a healthy take on pancakes- no. This is not it. This is my failed attempt at scrambled eggs.

I decided to make myself scrambled eggs and toast for lunch today- easy enough right? Toast- I can handle. Scrambled eggs- apparently not. I think I waited too long to scramble the eggs (pro tip 1: don’t watch How I Met Your Mother while cooking eggs on the stove) and when I went to start scrambling them they were solid around the edges. I didn’t really know what to do so I just kind of went with the flow and let that side finish cooking, flipped it, and let the other side cook. When it was done, I had an egg pancake, also known as an omelette with no filling. It worked out though because I ended up cutting it in half, putting each half in a sandwich, putting in my ham and cheese on top of the egg and folding it back over (it was quite big). It was delicious, and a perfect way to have non-runny egg in a sandwich. So I’m going to share with you what I did, in case you want to try it. And they shall be called egg pancakes. Even though that’s already probably a thing (also known as “pancakes”)

Ingredients:

3 eggs

1 glug of oil

Instructions:

1. Crack 3 eggs (2 would probably work too but I’d be a little thinner) into a bowl and whisk them all together.

2. Pour oil into a pan on the stove and heat up until the oil starts bubbling.

3. Pour the egg onto the pan and let it sit for a few minutes

4. Once the edges have begun to solidify, gently go around the egg, lifting up the sides with a wooden spoon (or the likes), separating it from the pan, checking the underside

5. Once the bottom is cooked (aka not leaking and a golden brown), carefully flip it and cook the other side to the same point.

6. When both sides are cooked, slide the “pancake” off and onto a plate. Slice in half to put in a sandwich, or really you can do whatever you want with it. You could straight up eat it like a pancake if you so desire.

I am going to look up “egg pancakes” and see if they are anything special. If so, I’m going to try cook them for dinner and see what the difference is between egg pancakes and regular pancakes, because now I’m curious. And also really hungry, and thus beyond caring about the fact that I’m about to cook pancakes for dinner. You know you’re jealous.

    I’ve seen that! I have been meaning to try it but I ran out of eggs after my last eggscapade and have not been back to the market. Not gonna lie though, favorite part of that video was 3:58 “If you want to be a good boyfriend now, go upstairs and give it to her in bed… the breakfast!”
