Scone Cookies

17 Feb

This is another one of my weird and wonderful creations from a recipe gone wrong. I call them scone cookies because they were supposed to be scones but they turned out like cookies…yeah creativity is hard when you’re hungover….

Anywho, what happened was basically, I was making scones and somehow when it came to the kneading the dough part, the “dough” was more of a gooey batter. I wasn’t about to dump that on my counter and try to knead it, so I took a spoon and scooped it into lumps on the greased baking sheet I had prepared. I knew I wasn’t about to have scones at that point, but damn it, I was hungry.

8 oz self raising flour

1 oz caster sugar

150 ml milk

2 oz butter

pinch of salt

1. Mix the flour, salt and butter.

2. Stir in the sugar and then milk.

3. Mix until smooth.

4. Spoon out batter onto a greased pan

5. Cook at 220 for 12-15 minutes

6. Serve with jam, nutella, etc.

…Ok here’s the thing, I can’t guarantee they’ll turn out like cookies, or scones. I don’t know what I did to make the dough gooey, I probably mis-measured something. If you follow the recipe precisely, chances are you’ll end up with scones, in which case see here to find instructions to finish them!

All I know is, they were actually delicious, and I don’t think it’s because they’re the only thing I’ve eaten all day.
